Gingered Honeydew Mist ~ Friday's 5 o'clock Wet Your Whistle Call!





Woo Hoo, it’s finally here! The fist party weekend of summer! What better way to launch the summer season than with a melon cocktail. Melons are at their best during summer and so many childhood memories revolve around ice cold watermelon. Honeydew is the adult answer to a melon craving and it’s kicked up in the form of a cocktail!    

                             

Gingered Honeydew Mist

2 cups Ginger Simple Syrup (recipe follows)
2 cups sake
1 cup honeydew puree
1 1/2 cups ginger ale
Garnish with frozen honeydew melon balls and fresh mint

Directions:
In a large pitcher, combine Gingered Simple Syrup, sake, honeydew puree. Pour 1/3 of the Honeydew mixture into a cocktail shaker with ice and shake until very cold. Strain into 2 chilled glasses and top with about 1/4 cup ginger ale for each glass. Can be served on the rocks too. Garnish with frozen skewered honeydew melon balls and fresh mint. Makes about 6 cocktails.
Ginger Simple Syrup

2 cups sugar
2 cups water
1/2 cup light corn syrup
3 tbs peeled fresh ginger coins

Directions:

In a small saucepan, combine sugar, water, corn syrup and ginger and heat over medium high heat, stirring constantly. Bring mixture to a boil; reduce heat to low and simmer for 3-4 minutes, stirring constantly. Remove from heat and cool completely. Strain and discard any solids. Store in an airtight container in refrigerator for up to 2 weeks.
