Isle of Pines ~ Friday's 5 o'clock Wet Your Whistle Call!




Pomegranate, winters jewel! According to Andrew Knowlton of Bon Appetite, “the best cocktails are the simplest—two or three ingredients mixed in the proper quantities, with passion.” Andrew quotes an easy formula to follow: spirit + citrus juice + sweetener = cocktail. Remember it (2 ounces spirit, 1 ounce citrus juice, 1/2 to 3/4 ounce sweetener), and you'll be able to invent your own concoctions. Examples: Daiquiri (rum + lime juice + sugar), Margarita (tequila + lime juice + triple sec), and whiskey sour (whiskey + lemon juice + simple syrup). The formula is also the basis for the Isle of Pines, which takes the old-world name of Cuba's second-largest island. When grapefruits are in peak season, it easily trumps the Mojito. So get creative this holiday season and mix up a new cocktail for the Santa in your house!












Ingredients:
1/2 cup pomegranate juice
1tablespoon sugar
1cup white rum
1/2 cup fresh grapefruit juice
Ice cubes 

Preparation:
Bring pomegranate juice and sugar to boil in heavy small saucepan, stirring until sugar dissolves. Boil until reduced to 1/4 cup, about 5 minutes. Cool syrup.
Pour 2 tablespoons syrup, 1/2 cup rum, and 1/4 cup grapefruit juice into cocktail shaker. Fill with ice; shake vigorously. Strain into 2 Martini glasses. Repeat to make 2 more drinks.
